RECIPE
-2x fillets of salmon
-Thumbnail sized portion of ginger
-Soy Sauce
-Mediterranean sea salt
-Portion of asparagus tips
-1 portion of couscous
-1 fresh chilli chopped
-Half a lime
-1 tablespoon of honey
-Sprinkle of Chinese 5 spice
-Small portion of dried peas
-Small portion of pine nuts
-Sprinkle of turmeric powder
-Sprinkle of coriander powder
-Sprinkle of cumin powder
Directions
First marinate the salmon with the ginger, lime, honey, chilli, Chinese 5 spice and soy sauce mixture. Drizzle a small quantity of sesame seed oil or olive oil over the salmon and season lightly with pepper and Mediterranean sea salt. Bake the salmon for 20 minutes. Whilst the salmon is cooking, take the asparagus tips and peas and lightly steam them for 1 minute. Place the couscous in a bowl, mix in the peas, pine nuts, turmeric, coriander and cumin. Then using the water you used to steam the asparagus, pour over just enough of the boiling water to cover it. Set aside for 3 minutes and allow the couscous to soak up the water. Serve and enjoy this healthy meal option.

Salmon contains beneficial omega 3’s and omega 6’s along with vitamins A,B and D and minerals zinc, calcium and iron. Salmon is a good clean source of high-quality protein. Omega 3 and 6 support a healthy brain and has been found to improve memory, protect eyes by preventing diseases such as macular degeneration and improve the vitality of skin and hair.
-Ginger contains antioxidant and anti-inflammatory properties.
-Asparagus is packed with vitamins and minerals including vitamin A,B3,K and minerals manganese, copper and zinc.
-Couscous is another great source of quality protein, vitamins and minerals.
– Chilis contain high levels of vitamin C which is a powerful immune booster. Minerals iron, potassium and copper are also present in chilis.
-Limes are also high in vitamin C and are alkalizing to the system.
-Honey has a multitude of healing properties and contains vitamins A,C,D and E and minerals calcium, potassium and magnesium.
-Chinese 5 spice consists of cinnamon, cloves, peppercorn, star anise and fennel seeds. Each of these spices contain high levels of antioxidants, vitamins and minerals which are great for detoxifying the system.
-Turmeric contains manganese, copper and potassium and vitamin B6 and has anti-inflammatory properties.
-Coriander contains fibre, zinc, iron and calcium. Vitamin C content is also very high in coriander.
-Cumin aids digestion and boosts the immune system thanks to its strong vitamin C content.
